Instructions

  1. In a large mixing bowl, combine the active sourdough starter and warm water, mixing until the starter is dissolved.
  2. Add the bread flour, sugar, salt, and freeze-dried strawberry powder to the bowl. Mix until a shaggy dough forms.
  3. Incorporate the chopped dried strawberries and white chocolate chips into the dough, ensuring even distribution.
  4. Cover the bowl with a damp cloth or plastic wrap and let the dough rest for 30 minutes (autolyse).
  5. Perform a series of stretch and folds every 30 minutes for the next 2 hours to develop gluten strength.
  6. After the final fold, cover the dough and let it ferment at room temperature for 4-6 hours, or until it has doubled in size.
