  • 1 cup sourdough discard
  • 1 1/2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup honey
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup fruit jam (strawberry, raspberry, or your choice)
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a bowl, mix rolled oats, flour, baking soda, and salt.
  3. Add melted butter, sourdough discard, and honey, stirring until combined.
  4. Press half of the mixture into the prepared baking dish.
  5. Spread the jam evenly over the base layer.
  6. Sprinkle the remaining oat mixture over the jam and gently press down.
  7. Bake for 25-30 minutes until golden brown.
  8. Let cool before slicing into bars. Enjoy!
