  • 1 cup sourdough discard
  • 2 ½ cups all-purpose flour
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 tsp baking soda
  • ¾ cup warm water
  • 2 tbsp melted butter
  • 1 egg (for egg wash)
  • Coarse salt (for topping)

Instructions

  1. In a large bowl, combine sourdough discard, flour, sugar, salt, and warm water. Mix until a dough forms.
  2. Knead the dough for 8-10 minutes until smooth and elastic. Cover and let rest for 1 hour.
  3. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  4. Divide the dough into small portions and roll into ropes. Cut into bite-sized pieces.
  5. In a pot of boiling water, add baking soda. Drop pretzel bites in batches and boil for 20-30 seconds. Remove and place on the baking sheet.
  6. Brush with egg wash and sprinkle coarse salt on top.
  7. Bake for 12-15 minutes or until golden brown.
  8. Brush with melted butter while warm. Let cool slightly before serving. Enjoy!
