- 4 boneless, skinless chicken breasts
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped
- ½ cup Kalamata olives, pitted and sliced
- ½ cup feta cheese, crumbled
- 1 tablespoon fresh lemon juice
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 2 tablespoons olive oil
- 1 cup orzo pasta
- 2 cups chicken broth
- ¼ cup Parmesan cheese, grated
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with salt and black pepper.
- In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook until golden brown on both sides, about 4-5 minutes per side. Remove and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
- Add chopped sun-dried tomatoes, sliced olives, crumbled feta cheese, lemon juice, dried oregano, and dried basil. Stir to combine.
- Pour in the orzo pasta and chicken broth. Stir well to ensure the orzo is evenly distributed.
- Return the chicken breasts to the skillet, placing them on top of the orzo mixture.
- Cover the skillet and let it simmer over low heat for 15-20 minutes, or until the chicken is cooked through and the orzo is tender.
- Sprinkle grated Parmesan cheese over the top and garnish with fresh parsley before serving.
