  • 10-12 birds eye chili peppers
  • 4 cloves of garlic
  • 1 red bell pepper, chopped
  • 1/4 cup olive oil
  • 1/4 cup  vinegar
  • Juice of 1 lemon
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 whole chicken, spatchcocked (or chicken pieces)
  • Fresh herbs (cilantro or parsley) for garnish

Instructions

1️⃣ Blend the chili peppers, garlic, red bell pepper, olive oil, red wine vinegar, lemon juice, smoked paprika, dried oregano, dried thyme, salt, and pepper until smooth.

2️⃣ Rub the peri peri sauce all over the spatchcocked chicken. Marinate for at least 2 hours.

3️⃣ Preheat your grill to medium-high heat. Grill the chicken for 20-25 minutes per side until fully cooked.

4️⃣ Garnish with fresh herbs and serve hot.
